Officials at the New England Culinary Institute say business is down at their restaurants, and they’re keeping a close eye on their financial situation.

The institute is based in Montpelier and Essex Junction and runs four restaurants. NECI is holding two weeks’ worth of "budget summits" with department heads aimed at taking a proactive approach to the downturn.

Executive Vice President Richard Flies says the cooking school is looking at the ways it does business and setting goals for next year’s budget early.
